Pineapple Weed

After finding an endless supply of Pineapple Weed on Westray last summer I’m now very keen on making some Pineapple Weed Posset. All I need is a buttery biscuit base, cream, sugar, lemon juice and, of course, plentiful supplies of Pineapple Weed flower heads.
I’m told that the flavours go wonderfully well with rhubarb, so that’s ideal for me. I wonder what Pineapple Weed ice cream would taste like? I’ll make some this summer and post the results if I manage to buy a fridge with a freezer by then. Exciting taste sensations await.
